OK, please buy the book Kendo: The Definitive Guide by Hiroshi Ozawa. The book explains a lot of what you're asking.
For expediency, I shall explain some of what you're asking.
1) We do not kow-tow. The proper term is rei and is a way of expressing your thanks/respect to your sensei who has just taught you. You should also rei with everyone who you practiced with that session because everytime someone spars with you, they're teaching you something.
2) You perform mokuso as a way of clearing your mind and/or reflect on the day's training. Breathe in quickly and deeply and exhale slowly.
3) Yame means stop

(not sure if this is the right subtopic to paste this question)
would like to learn the japanese words / commands used in the beginning & ending of the practise. e.g.: when we stand on "v" shape (our feet), there are a few commands shouted but i never caught what they were.
before we end the practise, need to kow-tow to sensei & dojo, and there were some words to say.
could someone help? if possible, with its meaning too?
thanks in advance.
